HOW TO MAKE MACAROONS
Ingredients:

1 1/2 cups powdered sugar
3/4 cup almond powder
3 egg whites
2 Tbsp. sugar
Pink food coloring.

Raspberry filling:
1/2 cup fresh thick cream1 tbsp. raspberry jam
a splash of vanilla
How to create Macaroon jewels
- Preheat the oven to 150° C (300° F). Line a baking sheet with parchment paper.
- Mix the powdered sugar and almond powder together in a food processor.
- In a bowl, beat the egg whites to soft peaks; add the sugar and continue beating until stiff peaks form.
- When the whites are forming glossy peaks, whisk in the food coloring (to desired color) until combined.
- Gently fold the egg whites into the almond mixture, one into the other little by little. At first it will be thick. Eventually it will be ribbon like, but not runny.

Using a pastry bag, pipe the macaroons onto the baking sheet, smooth the tops with a wet finger.
- Bake for 12 to 18 minutes, at 150° C, turn off the oven, open the door and let the macaroons sit at room temperature for about two hours: Do not touch, nor move them.
While they are cooling prepare the filling. Mix the fresh cream with the raspberry jam and vanilla. Once cooled sandwich the macaroons together with a touch of filling and fresh raspberries. Sprinkle with powder sugar.
Oh, this is too tempting. My mouth is watering. Thanks to blogging and Paris Breakfast, I know about macarons and have even found a café in Oslo where I buy them. I am going back there in two weeks......

Yes. I have enjoyed my Saturday. I flea-marketed and found a Christmas present for my DH.
Also, it is the most glorious autumn day over here in England. We took our dog for a walk and walked through some fields and a nature reserve... held hands... talked nonsense... watched the dog chase birds and had a good laugh.

Oh my indeed! Ok, I thought macaroons were all about coconut. That thing is gorgeous and a work of art, but not surprising if it's a French creation. The colour is unbelievable. Now I'm off to google macaroon and it's history.
